Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observations: Salad prep fridge potentially hazardous foods exceed 4°C. Discarded 2 large tubs of yogurt and cooked potatoes as they were at 10.5°C and there were no temp records kept on site.
Corrective Actions: Repair salad prep fridge immediately. Do not store potentially hazardous foods in salad prep fridge until it keeps these foods below 4°C/40°F.

Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observations: Premises requires cleaning and sanitizing under/behind equipment and shelving.
Corrective Actions: Staff to pull equipment food containers boxes, etc. away from all floor/wall joints in both Vault and food prep/service area and clean and sanitize immediately. Clean fan cover in large stainless fridge.

Observations: Vault dry storage area is disorganized and there are food/food items storage on the floor and cleaning sanitizing and staff cannot easily check for pests/rodents.
