EH had a conversation with the head chef who was on a trip during the routine inspection 10 days ago who stated that they cook the chicken wings to full temperature and it is not partially cooked. Non-continuous cooking approval from the local health department is no longer needed. Head chef was also able to provide a digital food thermometer during follow-up.

The following violations have also been corrected and were observed during followup.

- Hood system baffle filters were correctly oriented in the horizontal position.
- Floors and casters were visibly clean.
- Missing tiles and holes in walls were covered and the uneven floor surface in the warewashing area has been leveled to prevent water accumulating on the floor.
- Light bulb protective shielding has been replaced.

Operator states that they are in the process of relocating the bug zapper and floor on the right side of the cooking line will be leveled to prevent tipping of the cooking equipment with it's left outermost caster resting on top the of the slopping floor.
