This inspection is the for the pre-opening of Ice Ice Baby. The mobile unit is clean. Lighting intensity meets the requirements stated in the regulations. Gloves are present. Chlorine sanitizer is present. Thermometer is not needed due to shaved ice being the only menu item. PIC has correct test strips. A food grade water hose has been purchased since the pre-opening inspection. Hot water temps did reach the minimum stated in the regulations (111 degrees at the hand sink, 153 degrees at the 3 vat sink). Wastewater agreement has been sent to the health department and approved at this time. Pump on the water system is a food grade pump. Mobile unit is going to be winterized until March or April. PIC has elected to delay permit issuance until that time. PIC is to call the health department 2 weeks prior to planning to open so a check can be done to make sure everything is still in working order.
