This is the pre-opening inspection for Chef Italian Restaurant. Gloves and test strips are present at the time of inspection. All refrigeration is on and properly functioning, except the salad bar unit which is running at 66 degrees. Hot water at the handwashing sink is 116 degrees and 133 degrees at the 3 vat sink. There is a low temp, chemical sanitizing machine present; Ecolab brand. All bathroom doors are currently self closing. A covered trashcan is needed in the women's restroom. Lighting intensity does not meet the requirements stated in the regulations. 11 foot candles at the slicer, the cooking and prep area ranges from 15 foot candles to 40 foot candles, and the walk in refrigerator is 6 foot candles. Thin tip probe food thermometers are not present. There is no visual or auditory alarm on the Ecolab warewashing machine for the detergent or sanitizing lines. There is exposed, unsealed, untreated wood boxing in the lines running from the walk in cooler to the wall. This wood needs to be painted or sealed in a way to be non-absorbent. Handwashing sinks are not currently conveniently located. There is currently only one handwashing sink, at the back of the kitchen, that is plumbed directly to the mop sink. It is located approximately 13 yards from the furthest prep station and approximately 20 yards from the waiter/waitress station. The set up for the existing handwashing sink needs to be approved by the building inspector. Fire marshal has conducted an inspection and will be returning on January 16, 2023 for a follow up inspection. As of now, a date has not been set for the building inspector to conduct an inspection.
