Additional Comments

1) Top of pony wall needs to be sealed/painted to be a smooth, easy to clean, non-porous surface. Observed raw cinder blocks capping the wall.
2) Water line for ice machine needs to be raised above the capping of the wall and filled in around line so as not to have any gaps in capping.
3) Splashguards need to be placed on hand sinks in the dish wash room and at the food prep sink.
4) Cleanout at mop sink needs to be covered.
5) Gap at bottom of back door to the kitchen needs to be covered (door sweep).
6) Washer hook up area needs to be made smooth, easy to clean, non-porous, no cracks.
7) Gaps around hole beneath dishwasher needs to be filled/covered. Observed round cover on square hole leaving gaps around it.
8) Lighting intensity needs to be increased in the dish wash room and prep area along the pony wall. Lights measuring from 2-15 foot candles in dish wash room (needs to be 20 foot candles or above). Lights measuring from 20-36 foot candles along the pony wall (needs to be 50 foot candles or above).
9) Need full list of foods being prepared.

12) Once dishwasher is ready for operation, it must be checked and approved by the Health Dept. prior to being used.
