This is the pre-opening inspection for Chef Italian Restaurant. Gloves and test strips are present at the time of inspection. All refrigeration is on and properly functioning. The salad bar unit has been serviced and is running at 37 degrees. Hot water at the handwashing sink is 116 degrees. There is a low temp, chemical sanitizing machine present; Ecolab brand. All bathroom doors are currently self closing. A covered trashcan is present in the women's restroom. Lighting intensity does not meet the requirements stated in the regulations. Lighting under the hood ranges from 19 to 40 foot candles. Lighting at food prep areas has been corrected. Thin tip probe food thermometers are now present. Visual/auditory alarm on the Ecolab warewashing machine for the detergent or sanitizing lines has been confirmed to be present by Ecolab installer. The outside of the wooden beam running from the WIR to the back wall has the outside painted, but not the inside. Storage room is approved to operate as is, however, if food prep is done in there in the future, a handwashing sink will need to be added. Handwashing sink that was previously installed at the back of kitchen needs to be reinstalled.
