Observations & Corrective Actions
16: 1680 Observation: Hot temp dish machine is not reaching 180F on sanitize cycle.
Corrective Actions: Correction: Do not use this machine until it is repaired. The three (3) compartment sink must be used until the dish machine is repaired.
28: 3340 Observation: Degreaser stored on top of the dish machine.
Corrective Actions: Correction: Do not store toxic chemicals in any location where a discharge can contaminate food contact equipment. Relocated by PIC during the inspection.
47: 1150 Observation: Service panels were not in place on the ice machine.
Corrective Actions: Correction: Unless servicing, the ice machine, keep service panels in place to prevent contamination entry. Corrected by PIC during the inspection.
48: 1610 Observation: The data placard is not present on the hot temp machine. Chemical sanitizer has been added to this machine.
Corrective Actions: Correction: Do not operate this hot temp dish machine as a cold temp until the data placard is re-installed to verify cycle times etc.
51: 2210 Observation: Mop sink hose bib faucet has an atmospheric vacuum breaker. Hose has a pressure spray nozzle attachment.
Corrective Actions: Correction: Atmospheric vacuum breaker cannot handle constant pressure or back pressure. Remove the pressure nozzle or install a backflow preventor that works with back pressure and constant pressure. PIC to remove the nozzle.
55: 2810 Observation: Floor tiles missing at the fry station and wait station. Grout missing in dish wash area.
Corrective Actions: Correction: Repair floor and tiles so as to be easy cleanable.
Additional Comments
Opening inspection after a fire. Facility is clean except for floor behind the ice machine. Reminder to monitor the clean plate storage at cookline. Clean plates must not be allow to collect organics and debris before loading. All TCS foods ribs, pasta, fish etc were discarded due to facility closure.
