Received a call yesterday afternoon from Texas Road House stating that while trying to install a new fire security system one of the employees who was working on the security system was in the ceiling and kicked the pipe that triggered the fire system of two cooking areas in the main kitchen. The system to put out a fire is the nozzles from the extinguishers above dispenses a green slime that turns into a white foam to prevent the fire from spreading. There was no fire that occurred when alarm was accidentally set off. Discussed with person-in-charge how the affected areas were clean and what the areas that got sprayed were: the fry area and the equipment such as the fryer, rib grill, seafood flattop grill, wall and floors behind fryer and grill, back and sides of convection, stove top, bread rack, walls and floors of the hot prep area. Person-in-charge stated that boneless wing equipment was not affected but discarded ice/water bins located inside equipment bread on bread rack in hot prep area was discarded, food discarded in drawer under rib/grill seafood flat top, point cooler that had toppings inside were discarded. Discussed with person-in-charge how the affected areas were cleaned and it was stated the the hoods from the fryer area, rib grill, seafood flattop, and hot prep area were all taken down, washed, rinsed, sanitized, and then ran through the high wash ware washing machine. Stove top burners were taken off stove and washed, rinsed, sanitized, and placed in ware washer. In place or not easily moveable equipment were wiped down with soap water, sanitizer and for areas degreaser. There was no foam residue and all equipment was clean during the time of reopening inspection. Melter's were taken out and washed, rinsed, and sanitized. Floors around the area were mopped and cleaned leaving no foam residue. All dishes around both areas even though not affected went through ware washing machine. Sanitizer that was used was sink and surface sanitizer.
All employees followed protocol and establishment was closed for business when fire alarm went off and stayed closed. Establishment can now reopen to the public.
