10: 2310 Grill hand sink observed with dirty towel stored in basin.
Corrective Actions: Hand sinks shall be available for hand washing at all times. Towel removed from basin.

10: 3030 No paper towels provided at grill area hand sink.
Corrective Actions: Paper towels shall be available for drying washed hands. Towels provided.

15: 470 Observed raw bacon stored above RTE milk and cheese in the walk-in cooler and raw chicken stored above RTE pineapple slices and veggie patties in the line prep cooler.
Corrective Actions: Raw animal proteins shall be stored away from and beneath RTE foods, store on bottom shelf to prevent cross contamination.

23: 830 The following expired foods observed stored in the walk-in cooler: jambalaya with an expiration date of 11/10/22 and chipotle sauce with an expiration of 11/5/22.
Corrective Actions: Prepared foods shall be dated the day of preparation (day 1) and discarded on the seventh day. Food voluntarily discarded.

28: 3350 Observed 2 cans of Black Flag pesticide spray stored in mop area.
Corrective Actions: Pesticides shall be applied by a commercial pesticide company. Do not use pesticides, trapping methods only are approved. Pesticides voluntarily discarded; product removed from restaurant.

43: 550 Observed ice cream scoop stored in stagnant ambient water.
Corrective Actions: In-use utensils shall be properly stored to prevent the growth of harmful bacteria. Store in running water or in chest freezer at or below 41F. Scoop washed, set in clean container and placed in chest freezer.

47: 1570 Observed excessive accumulation of ice and ice particles in the walk-in freezer. Doors of both the walk-in freezer and walk-in cooler do not close completely on their own. Ambient air temperature of WIF noted at 21F and 40F in the WIC. Foods in WIF observed frozen and all temperatures in WIC at or below 41F.
Corrective Actions: Equipment shall be maintained in good repair. Ensure doors close completely to maintain safe food temperatures. Have freezer serviced to determine source of ice and ice particles. Follow up in 30 days.

-Buns shelving not 6" off floor, elevate to allow for proper cleaning.
-Discontinue use of single-use vanilla ice cream containers. These containers are not designed of durable materials.
-Reminder, hood due for service 11/23/22.
-Several ceiling tiles are not in place due to service being conducted on heating system. PIC stated tiles will be replaced once work is complete.
