22: 0820 (A2) TCS (time temperature control for safety) foods ( open canned mushrooms 52F, sausage patties 52F) observed cold holding at improper temperatures at the prep cooler. Corrective Actions: Cold hold TCS foods at 41F or less.
The Person in charge said the cooler was open due to a large influx of customers for the last 2 hours. The PIC moved said out of temperature TCS foods to the walk in cooler to rapidly cool and stated they would monitor the prep cooler.
