16: 1770 (A) EHS observed dried on food debris (appeared to be raw chicken) on a yellow poultry cutting board stored with clean equipment. Food debris also observed encrusted at the small slicer on the back prep tables. According to the person in charge the slicer is no longer used.
Corrective Actions: Equipment food-contact surfaces and utensils shall be clean to the sight and touch.
EHS discussed deep cleaning and covering the slicer that is no longer in daily use.
Corrected- The person in charge initiated cleaning said food contact surfaces.
