15: 540 unwrapped trays of house made marshmallows observed in direct contact with the metal siding of the speed rack shelf they are stored on. Speed rack shelf is not a food contact surface. Food shall only be in contact with equipment and utensils that are clean and sanitized. Corrective Actions: Food shall only contact surfaces of equipment and utensils that are cleaned and sanitized or the food shall be in contact with only single-service items, or linens and napkins as specified in 3-304.13.
THe person in charge removed the marshmallows so they were not in direct contact with the speed rack shelf.
15: 470 Raw shell eggs observed stored improperly over ready to eat trays of marshmallows in the walk in cooler. Corrective Actions: Prevent potential cross contamination by not storing raw animal foods over ready to eat foods. Do not store raw animal foods over ready to eat foods. The food employee moved the raw shell eggs to below the ready to eat foods.
23: 830 TCS foods not date marked correctly. Some TCS foods are missing date marks (butter chicken sauce, rice) , others are date marked with the wrong month numbers (grit cakes 8/12)
Corrective Actions: Date mark the container of RTE time/temperature control for safety (TCS) food prepared and held for more than 24 hours in the food establishment to indicate the day or date by which the food shall be served or sold. The RTE TCS food may be held for a maximum of 7 days with the day of preparation counted as day 1. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
23: 840 Whipped ricotta cheese spread observed held past the maximum 7 days at 41F or less. Said cheese spread date marked 3/2/2023. CHeese spread held for 13 days in the cooler. Corrective Actions: Prepared TCS foods have a maximum holding time of 7 days at 41F or less with the day of preparation being day 1. Food must be served or sold within the 7 days.
Corrected- said spread was voluntarily discarded.
