15: 470 Boxes of Raw chicken improperly stored over beef and pork in the walk in cooler.
Corrective Actions: Prevent possible cross contamination by separating different types of raw animal proteins and storing appropriately according to final cook temperatures. Store raw chicken below raw whole muscle meat beef and pork. Corrected- the person in charge relocated said chicken to the bottom shelf of the cooler.

22: 0820 (A2) Potato wedges 50F at the open top prep cooler on the line are cold holding at improper temperatures.
Corrective Actions: Cold hold time/temperature control for safety foods at 41 F or below to inhibit the growth of harmful bacteria. EHS discussed an option for time control on said wedges.
