23: 830 The commercially processed ready-to-eat (RTE) cheese was held more than 7 days after the commercial package was opened.. Corrective Actions: Food shall be discarded if it: 1) exceeds 7 days or at 41°F (except the time it is frozen); or 2) is in a container or package that does not bear a date or day.
Additional Comments
The small two door cooler in the front was not working and they had a work order in on the machine. The food was discarded from,the Avantco cooler in the kitchen area due to temperature. A follow up will be done next week and they have an extra cooler they will be working out of that is holding temperature at below 40 degrees.
