Observations & Corrective Actions

03: 0060 (3b, c, q) PIC could not properly identify the signs and symptoms associated with illnesses that require exclusion.
Corrective Actions: EHS provided employee health handout.

06: 0220 Observed an open can of soda in the prep unit.
Corrective Actions: PIC discarded.

10: 3030 No paper towels in the women's restroom.
Corrective Actions: PIC provided paper towels.

15: 0470 (A 3-8) Observed raw beef over RTE chicken in the low boy and raw chicken over RTE chicken in the walk-in. Also observed egg rolls, chicken, and veggies uncovered/protected in the units.
Corrective Actions: PIC moved raw meats to be below RTE foods. Consider covering.

16: 1780 Observed that the can opener blade was dirty.
Corrective Actions: PIC cleaned.

22: 0820 (A2) Observed chicken wings at 73°F, garlic in oil 92°F, and fried chicken pieces at 72°F in the low boy. Also observed bean sprouts in water at 74°F in the walk-in.
Corrective Actions: PIC voluntarily discarded all items.

23: 0830 No date marking on cooked noodles, chicken, or egg rolls in the walk-in.
Corrective Actions: PIC date marked the items.

28: 3330 Observed spray bottles with cleaning chemicals unlabeled in the kitchen.
Corrective Actions: PIC labeled.

Additional Comments

Observed dust and debris on portable fan and on storage racks, and oil in the hood filters. Discussed with PIC proper storage of utensils on the cook line. Lights over the cook line were not working. Some ceiling tiles in the kitchen were soiled. Replace with smooth, easily cleanable tiles. Replace the stained, scratched cutting boards.
