Observations & Corrective Actions

08: 0160 Observed employee not wash hands when handling dirty and then clean.
Corrective Actions: Employee corrected and washed hands during inspection. Wash hands when going from dirty to clean.

15: 0470 Observed raw chicken stored next to raw beef in walk in unit.
Corrective Actions: Store raw chicken o nbottom and other raw meats on top. Follow cook temperature hiearchy.

16: 1780 (E) Observed debris on can opener blade on side of prep table in back kitchen and pink mold on upper top portion of ice chute at soda dispensers in dining area.
Corrective Actions: Clean.

18: 0700 Observed chicken cooked to 144-178F that was about to be served.
Corrective Actions: Employee corrected and cooked chicken to above 165F. Cook all poultry products to 165F.

22: 0820 (A2) Observed raw beef at 44F in reach in unit on cook line.
Corrective Actions: All cold TCS foods shall be at 41F and below. Advised manager to not leave TCS foods out for a prolonged period of time.

25: 0930 Did not observe an asterisks on lamb on menu. Also did not observe statement of these items are cooked to order.
Corrective Actions: Add statement, "These items are cooked to order." Also place an asterisks on all undercooked items.

33: 0810 Observed kibe cooling at 79F that had finished cooking 45 minutes prior but inital cook temp was unknown. Employee voluntarily discarded. Also observed raw meats cooling in a deep, covered container in the walk in.
Corrective Actions: Pic portioned it into a smaller, shallower containers and uncovered.

44: 1960 Observed food processor in storage that was still wet in the interior. Also observed plastic pans stored with wetness.
Corrective Actions: Completely air dry items before storing.

47: 1570 Observed a torn gasket in the prep unit on the cook line. Also observed rusty racks in the walk-in.
Corrective Actions: Replace.

47: 1580 Observed multiple worn cutting boards in storage and along the prep line.
Corrective Actions: Refinish or replace.

49: 1800 Observed food debris on shelves in the kitchen and racks throughout facility.
Corrective Actions: Clean.

55: Observed that floors and walls behind/under equipment had accumulations of debris.
Corrective Actions: Clean.

Additional Comments

Will follow-up on violations. Call for re-inspection. Inspection conducted with another EHS.
