Emily Guthrie, District DSO, and I discussed the following since the 7/14/2022 inspection that you need to be aware of:
12VAC5-421 - 3590 - Disposition of a variance request
c. Each variance shall be attached to the permit to operate and posted prominently in a conspicuous place for public view.
Gave franchise owner copy of variance to post with permit.
We noticed that you were verifying calibration of the pH meter. However, the HACCP Plan (see attached) states that the pH meter must be calibrated for each batch daily. Please refer to the instructions for your pH meter and calibrate it daily as required by your HACCP plan.
I will follow up on these items at the next routine inspection.
