23: 840 Observed pre-sliced deli ham, marked with a date of 5/6(date opened) and boiled eggs without a date opened (opened Friday).
Corrective Actions: Discard the opened ham at this time and label the eggs with 5/17-opened). Ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date or within 7 days of opening a commercially prepared ready-to eat refrigerated product. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. EHS will email an infograph for date limits.

Additional Comments

Reviewed the test strips, (chlorine for the dish machine available). The QT-10 strips are NA. Cleaning staff for the daycare appears to use a product that is a quaternary ammonium and the strips may be used for that. Discussed chemical safety, the importance of labeling bottles and using those for that chemical only. Discussed allergen safety and EHS will email a new handout for preventing cross contact. This facility is dedicated to allergy safety and has excellent training and allergen friendly protocols.
