Observations & Corrective Actions
22: 0820 (A2) Milk was found to be 52 F in the 2-dr uc cooler. This cold holding unit was found to be holding at 53 F.
Corrective Actions: Correction: Cold holding is 41 F and below. As it was unknown how long this milk had been out of temperature, the manager discarded this gallon of time/temperature control milk and a work order is being put on on this cooler. *Corrected on site*
47: 1570 47 OUT 1570 Good Repair The 2-dr undercounter prep cooler used to hold beverages and beverage items is not in good repair or good working order and was found to be 53°F. This unit was not holding at or near 41 F. during the last last week either. Milk in this cooler was found to be 52 F by the inspector's thermometer.
Corrective Actions: Correction: Get this cooler repaired to good working order please ensure all gaskets the doors are clean and in working working order before you use it for cold holding TCS (time/temperature control for safety) foods such as milk.
Additional Comments
Thank you for working to address many of the violations noted on the 7/7/2023 inspection. 48 OUT 1520 Thermolabels to ensure the dishware and utensils are properly sanitizing to 160 F at the high temperature dish machine have been ordered and should arrive soon.
Remind staff do not use the hand washing sink to dump drinks or ice ONLY use hand washing sink for washing of hands.
The inspector's thermometer was found to be 33 F in a cup of ice water today.
