22: 0820 (A2) Observed the Upper lid prep cooler holding impropperly with Ham(59F), Jalapenos (60F), and Sliced Tomatoes(63F) Corrective Actions: All product under 4 hours in the prep unit has been removed to cool if possible. All product over 4 hours in prep unit shall be discarded until funtionality has been restored. Unit functionalilty shall be restored within 3 days (06/03/24)
