22: 0820 (A2) Observed food in the 2 door cooler cold holding above 41F. After looking further, observed ice buildup on the back of the cooler. Corrective Actions: Move food to another unit that can maintain 41F or below. Defrost the 2 door reach-in cooler. Have the cooler serviced if necessary. Send an email to the inspector showing the reach-in cooler is working properly.
Additional Comments
Observed the beginnings of a deck at the rear of the mobile unit. After questioning the purpose, operator stated he needs more refrigeration and freezer space. He also is looking to move the cooking equipment to a more ventilated area for heat removal. Requested an email that states exactly what he wants to do to ensure the plan is approvable according to the Food Regulations.
