22: 0820 (A2) The small tropicana reach-in cooler across from the deli is cold holding deli foods above 41°F. Ambient temperature observed at 50°F. (PIC moved the deli foods to another cold holding unit and adjusted the temperature of the cooler. PIC will call for repair if the unit does not return to 41°F or below.)
Corrective Actions: Move deli foods to another cold holding unit. Adjust or repair to the cooler to restore 41°F or below. (Immediate Correction Needed.)

33: 810 Observed foil covered beans cooling in the deli walk-in cooler. (Improper cooling method observed.) (Beans were vented to allow steam to escape.) (Immediate Correction Needed.)
Corrective Actions: A. Cooling shall be accomplished in accordance with the time and temperature criteria specified under 12VAC5-421-800 by using one or more of the following methods based on the type of food being cooled: 1. Placing the food in shallow pans;Pf 2. Separating the food into smaller or thinner portions;Pf 3. Using rapid cooling equipment;Pf 4. Stirring the food in a container placed in an ice water bath;Pf 5. Using containers that facilitate heat transfer;Pf 6. Adding ice as an ingredient;Pf or 7. Other effective methods.Pf B. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: 1. Arranged in the equipment to provide maximum heat transfer through the container walls; and 2. Loosely covered, or uncovered if protected from overhead contamination as specified under 12VAC5-421-610 A 2, during the cooling period to facilitate heat transfer from the surface of the food.

47: 1570 The door of the deli walk-in freezer does not close. It is being held shut with a 5 gallon container of cooking oil. (PIC states 2 parts are on order: a seal for the door and the latch. Parts should arrive in 3 weeks.) (6 weeks to correct.)
Corrective Actions: Repair the door to restore proper function.

47: 1570 Observed a mountain of ice forming on the floor of the deli walk-in freezer from an apparent drip or water condensation spot on the pipe above the ice formation. (6 weeks to correct.)
Corrective Actions: Remove the ice and repair the unit to restore proper function.

Additional Comments

No food prep to observe. The deli staff went home today at 11 AM. Observed foods under time control in the hot display case. Observed sandwiches from breakfast discarded after 4 hours.

Observed seating removed from establishment. Establishment now has 2 booths, 8 seats total. This establishment is a convenience store/gas station that does not have a national restaurant chain within the deli. This establishment now falls under the jurisdiction of the Virginia Department of Agriculture and Consumer Services. Please contact the Roanoke Office (540-562-3641) to request a permit and inspection before the expiration of your VDH permit (8/31/2024).
