Preopening inspection conducted. Permit is pending the following:
*Hand washing sink: there is one hand washing central in the kitchen, but it has a leak and needs to be sealed to the wall. There are a few wood pieces near this area that also need to be sealed.
*Facility needs a new grease trap interceptor (interior) to be in compliance with the City of Lynchburg FOG program (wastewater department) based on previous issues and inspection
*Need a written policy for using time as a public health control for the sushi rice (discussed process-clarification on limitation of wood used in a food establishment. The wooden bowl is not an approved material for food contact)
*Discussed noncontinuous cooking: the person in charge will not have noncontinuous cooking processes at this time, and will submit procedures for this if they want to do this in the future
*Some older equipment needs to be deep cleaned including: the can opener(may need to replace the blade); meat marinater(gasket needs to be replaced); cutting boards (will need to replace or resurface the board at the preparation cooler unit); the scale; any other pieces the person in charge finds.
*Will also need a mop hanger
*Need chlorine test strips (Cintas is scheduled to come as well)
*Eggs were observed above onions in the walk-in cooler. Raw eggs need to be separated from produce or other ready to eat foods to reduce the risk of cross contamination
