Observations & Corrective Actions

49: 1770 (C) 49 OUT 1770 The gaskets at a few cold holding units / coolers have old food particles and grime in these or a mold-like / mildew-like growth on them.
Corrective Actions: Correction: Please ensure the gaskets to cold holding units are regularly cleaned as the condensate on these from opening and closing and being touched when staff have food particles on their hands can cause them to become dirty and in need of cleaning regularly. These cold holding units will be cleaned in the next week and prior to the kick off of the season as this location is used for primarily sporting events.

Additional Comments

Verbally reviewed the following during today's inspection: employee beverage storage being away from food, food prep, single-use to-go items, and clean/ sanitized dishware; importance of air drying dishware - do not wet stack dishware ; hand washing policy; employee health policy, cell phone use policy; storage of employee personal items such as jackets and bookbags; monitoring the sanitizer strength; date marking; handling orders with allergens; using food grade containers to holding food; storing chemicals below and away from food, food preparation, single-use food containers, to prevent accidental chemical contamination etc. Water was found to be between 115-122 F at sinks.

This location is usually used to serve food at basketball and volleyball games. Liberty does the pest control for the concession stand. TPHC (time as a public health control) is used for hold holding items such as chicken tenders, hamburgers, and hot dogs. The small snack stand #2048 is now Rookies and no longer permitted under VDH.

Reviewed the regulation changes including : starting summer 2021 for there to be a written vomiting and diarrheal clean up procedures (VDH / VDACS Guidance for clean-up June 2021 guidance was previously left) and you already should have a clean up kit (present in one stand); also starting summer 2021 you must post all pages of your most recent inspection OR post a sign saying inspection is available for viewing on request (QR Code sign is being emailed again) - you can post this near your food permit which also must be visible to the public / your customers .
