Observations & Corrective Actions
8: 140 An employee was observed placing raw chicken on to of the grill with their gloved hand, going to the sink and rinsing their gloved hand off and then return to food prep without changing gloves.
Corrective Actions: The employee was stopped and told to remove their gloves and go back to properly wash their hands. At every task change employees must know to properly wash their hands with soap and water for 20 seconds before returning to work and dawning new gloves.
20: 800 The facility was observed attempting to cool down queso without aiding it with an ice paddle or ice bath. The queso was at 98°F when it was prepared at 1230.
Corrective Actions: The queso was set out to cool at room temperature so the cooling time did not begin until some time later. Due to this the facility was allowed to keep the product and rapidly cool the food down with an ice bath and place in the walk-in cooler. Monitor the food items to ensure that it reach 70°F within one hour and below 41°F within four hours.
46: 0580 (B) (C) (D) An employee was observed using gloves after they were soiled with raw chicken and then rinsed off to return to food prep.
Corrective Actions: Gloves must be changed when heavily soiled or between tasks to protect food from cross-contamination. Employee was stopped and corrected.
