The facility corrected several of the key items discussed at the last routine inspection.

Date marking improved and all items prepared over 24 hours in advance were dated for disposition in the walk-in cooler and the prep units.

Separation of the raw meat products were segregated from ready to eat food items in the prep units as discussed.

The cold holding issue in the prep units were fixed. The units in question had their internal temp lowered and all items in the unit were holding below 41°F as required.

The cleaning around the walls and flooring in the main kitchen, especially around the grill, was completed. All grease, dirt, and other trash or soilage was removed. The managers on site says they will inclease the cleaning routine of the area to prevent future excess build up in these locations.

The walk-in cooler has been schedule for repair around the base baord panels, ceiling panels, threshold and other areas that are in need of extra work.

Final repairs will be reviewed at next inspection.
