22: 0820 (A2) Observed in the one door fridge, a container of green beans at 43 degrees Fahrenheit (F). Kitchen manager stated that green beans were heated and cooled Monday (06/03/2024). Observed a container of baked beans at 43F and milk at 43F. Corrective Actions: Kitchen manager voluntarily discarded the green beans, baked beans, and milk. Ensure that temperature control for safety food items are cold holding at 41F or below.
36: 1320 (A-D) Observed no temperature measuring device in the one door fridge to measure the air temeprature of the unit. Corrective Actions: Place a temperature measuring device in fridge to ensure the unit is working properly to maintain food at 41 degrees Fahrenheit (F) or below. Recommend adjusting fridge to be 36 to 38F.
48: 1530 Observed no quaternary ammonium sanitizer test strips available on site. Corrective Actions: Obtain quaternary ammonium test strips to measure the concentration of the sanitizer solution made with steramine tablets.
