8: 170 Observed employee attempt to wash hands in 3 compartment sink.
Corrective Actions: Wash hands in designated hand sink only. Discussed with employee.

8: 160 Observed employee handle dirty dishes then handle clean dishes without washing hands.
Corrective Actions: Wash hands any time comtamination may have occurred. Discussed with employee.

13: 380 Observed a dented can of peaches and pineapples.
Corrective Actions: Set aside for return or discard dented cans. Do not use if dented along the rim or the seam of the can.

16: 1700 (6c) (6d). Observed dish machine concentration to be at 0 PPM.
Corrective Actions: Have unit serviced. Concentration should be between 50 and 100 PPM to properly sanitizer. Manager stated she will call for service today. Manually wash, rinse, and sanitize until unit is fixed.

23: 840 Observed deli ham dated 5/9.
Corrective Actions: Discard. Use or discard within 7 days of opening.

40: 240 Observed both food employees without proper hair restraints.
Corrective Actions: Food employees shall wear hair restraints such as hats, visors, hair nets or beard nets to effectively keep their hair from contacting exposed food, clean equipment, utensils, linens, and unwrapped single-service items. This section does not apply to food employees such as counter staff who ONLY serve beverages and wrapped or packaged foods, hostesses, and wait staff.

47: 1570 Observed dish machine not functioning properly. Possible issues with sanitizer and timing of which chemicals are dispensed when. Temperature did not reach 120 degrees F.
Corrective Actions: Have unit serviced. Do not use until repaired.

48: 1370 Observed dish machine to be an older model without an visual or audible alarm to signal if sanitizer is not delivered.
Corrective Actions: Upgrade or replace to meet requirements of an visual or audible alarm.

Additional Comments

Observed expired test strips (expired in 2012). Kitchen manager requested for front office to order. Emailed copy of vomit and diarrhea clean up plan to kitchen manager. Please email confirmation of upgrade to a visual or audible alarm for dishmachine or overall decision on dish machine replacement or repair. May need possible replacement of whole machine. Please post sign notifying of most recent inspection report.
