This location was visited for a pre-opening inspection this morning (8/14/2023). The permit could NOT be issued today as the cooking equipment, cold holding equipment, & dish drying cart / shelving was not present yet. Also, there was not a vomiting / diarrhea clean up kit or procedures, no metal stem food thermometers, no reminder to wash hand signage at the kitchen hand sinks, the kitchen hand sinks and kitchen three-compartment sink was not sealed / caulked against the wall.

Hot water was found to be 118 F at the three-compartment sink. Hot water was found to be 108 F at the kitchen hand sink. Hand sinks had hot and cold running water available on demand under pressure. Lighting was shielding at the dishwashing areas, the food storage areas, and food prep area. Lighting was between 50 - 79 foot candles in the kitchen. There was Signet SK2 sanitizer at the three-compartment (Quat) and Quat sanitizer test strips. The dumpster is not present yet, but area is on easily cleanable asphalt pad. There is no hood and discussed if ventilation / condensation and steam become a problem due to boiling water that would need to be addressed in the future.

CO from the building officials was issued 7/27/2023.

Bedford pest control will provide pest control for the facility.

The following was reviewed and discussed today: Handling food orders with allergies; hand washing policies/ procedures; ensuring sick staff are not working in/around food; ensuring kitchen staff are wearing a hair restraint (head & beard when applicable); using food grade containers to hold food; storing chemicals below and away from food, food preparation, single-use food containers, to prevent accidental chemical contamination; etc. ; employee beverages; the sanitizer strength at the three-compartment sink being check regularly throughout the week; food & equipment temperatures are being monitored. Also, discussed ensuring food is protected when carried from the kitchen to each classroom as some classroom delivery will require the food to go outside. Food will be all cooked / prepared in the kitchen, but will be scooped out or placed on plates or bowls by staff in the classrooms.

A laminated manual three-compartment sink dishwashing poster, VDACS/VDH guidance for clean up of vomiting & diarrheal events in food establishments, and a FORM 1-B page 19 & 20 OEHS signable employee health policy was explained and left today.

Discussed the regulation changes from 2021 for there to be a written vomiting and diarrheal clean up procedures (left VDH / VDACS Guidance for clean-up June 2021 guidance) and you already should have a clean up kit (in progress of obtaining); also starting summer 2021 you must post all pages of your most recent inspection OR post a sign saying inspection is available for viewing on request (QR code poster is being emailed) - you can post this near your food permit which also must be visible to the public / your customers (VDH food permit has not been issued yet).
