- Observed no hot water heater installed in the mobile unit. Operator stated that the hot water heater was not sufficient enough to maintain temperatures and had to return the heater. Obtain hot water heater that can maintain a minimum of 110 degrees Fahrenheit at the 3 compartment sink and a minimum of 100 degrees Fahrenheit at the handwashing sink under constant water pressure.
- Discussed installing grease trap under 3 compartment sink. Observed the grease trap kit.
- The ceiling above the prep unit cooler was observed to have some installation exposed. Cover installation.
- Discussed adding caulking between coving and floor to seal any additional cracks to make the area smooth and cleanable.
- Discussed VDH V&D clean-up kit. Observed no absorbent (i.e. kitty litter, sand) on-site for the kit. Obtain absorbent for clean-up kit.
- Discussed employee health policy.
