Observations & Corrective Actions

15: 470 15 OUT 470 REPEAT & CORRECTED Raw foods of animal origin (fish/seafood, beef, in-shell eggs, and chicken) were observed stored over and/or beside items such as produce (onions and broccoli), above cooked chicken, and above white styrofoam containers of house-made yum-yum sauce in several locations in the walk-in cooler.
Corrective Actions: Correction: Store produce, containers of ready-to-eat sauces, or cooked chicken above raw or partially cooked fish, above raw chicken, & above raw beef. Separate raw foods of animal origin during storage, preparation, holding, and display from raw ready-to-eat foods to prevent cross -contamination that may cause someone to get ill ** Manager is in the process of moving the foods so that the produce, yum yum sauce, etc. is stored above raw chicken, raw seafood, and raw beef -- owner / manager need to check things in the cold holding units a few times a days as well as re-train stay on where to put things . Possible having signs or designated areas on the lower shelves for the in-shell eggs, raw seafood, raw chicken, and raw beef might help **

35: 790 35 OUT 790 CORRECTED Improper methods were observed being used to thaw several packages of commercially vacuum sealed fish (tuna) as they had been thawed in the walk-in cooler without the package being opened. The labeled stated in small print to remove from packaging when thawing. These items were still partially frozen when inspector noted this issue.
Corrective Actions: Correction: Remove fish that has been packaged in a reduced oxygen package (vacuum sealed) prior to thawing and store 41 °F or less while thawing. OR you can completely cut off one of the 4 sides of the package before thawing and allow the raw fish to still rest in the package. This is necessary as you need to break the oxygen-free packaging to prevent the growth of C. botulism. ** Discussed with management and staff will be educated about this Corrected during inspection by staff fully removing the partially thawed raw fish from the ROP packaging during inspection**

Additional Comments

NOTE: Educated the owner/manager of ROP packaging and how C. bot can naturally be found in seafood . This cannot grow and is not usually a problem as long as there is oxygen in the environment as well as this is not a problem when the product is still fully frozen.

Again discussed cross-contamination and organizing the walk-in cooler better.
