Gave owner copy of Employee Health Policy and sign off forms with holes punched. Please have everyone who works here to sign and put it in a notebook.
23: 830 Ham, turkey, and mac and cheese in walk in were all made yesterday, and none of them were date marked. Corrective Actions: COS. Foods were date marked and owner was reminded that this is a requirement for foods made or opened packages of lunch meat, hot dogs. This is a repeat violation.
39: 690 Walk-in freezer has large amount of frost build-up and has iced up on top of some of food. Corrective Actions: Case with frozen milk gallons with potentially contaminated lids from ice build-up were discarded. Have walk-in freezer defrosted or repaired and clean up ice build-up. Keep foods from under areas where ice is building up. Freezer must be repaired/frost free by 11/2/2023.
40: 240 Owner observed making sandwiches, but no beard net. Corrective Actions: As soon as possible (But no later than 11/2/23), get beard nets and start wearing when actively prepared in prep.
49: 1770 (B) Fryer (May need to be removed) and sandwich press are showing a buildup of soil, grease, debris. Corrective Actions: As soon as possible, but no later that 11/2/23, have these pices of equipment clean. Clean at frequency to prevent build-up.

Permit posted and good through 10/31/24. VDH QR code sign reminding customers they can ask to see most recent inspection is posted at point of sale. Asked owner who are the members of Bistro Bros, Q Deli, LLC, and he stated that the only one is himself - Bernet Revely. Asked if either Cupid's BBQ or son's mobile unit are storing any food or supplies at establishment - Owner states not at this time. Occasionally will keep fries in freezer. Discussed that any foods that are not for his establishment need to be clearly labeled for other businesses. There was a deep fat fryer that had chicken wings - stated for employees. This is not located under a hood. Owner states he was told in the past and had paperwork that these did not require a hood. Told him to have that paperwork or something from Firer Marshall in the establishment stating this, or take these fryers home. Owner states that pork butts (like those in walk-in) are still being cooked in oven.
