I visited this location today for a pre-opening inspection this morning. A VDH food permit could not be issued today.

A sandwich table / prep cooler, a walk-in cooler, a tall salsa cooler, the tank hot water heater, etc. were not at the new location yet. Also there was no sanitizer test strips, no sanitizer for the three-compartment sink, no metal stem probe thermometer, no written procedures for cleaning up a vomiting and diarrhea incident OR a clean up kit available. Also, the wall junction around the left side of the dish machine needs to be caulked to the wall. Please call the office at least four (4) days ahead of getting all these things moved so an inspection can be arranged & hopefully your VDH food permit can be issued soon. 434 477 5921

Air gaps were present at the 1-compartment and 3-compartment sink in the kitchen. Water was found to be 118 - 130 F at the three-compartment sink after running for about 1 minute. When the dish machine is used, water becomes a small trickle at the three-compartment sink. Hopefully when you bring the tanked hot water heater over, it will help with that water issue. After running for about 1 minute, hot water was 109-122 F. at hand sinks throughout the bar and kitchen area.

Floor plans were updated today to add the drink station at the server area, add the salsa cooler to the plans, and move the keg 3-dr cooler to the other side of the bar area. Also the outside walk-in cooler added to plans.

Discussed the need to have an employee health policy -- one will be emailed in both English & Spanish. Also discussed the need to monitor the temperature of foods when cooking, cooling, hot holding, and cold holding.
