I visited this location for a pre-opening inspection of the cafe addition on the main floor of this assisted living community.
The VDH food permit is being issued and this location may open to serve food.
This location has: sanitizer; sanitizer test strips; a high temperature dishwasher thermometer; a metal stem probe thermometer; thermometers in the cold holding unit; hot water was found to be 119 F at a hand sink & 121 F at the three-compartment sink; there is an air gap under the three-compartment; lighting was shielded throughout the kitchen; the lighting was between 98 - 121 foot candles in the kitchen.
The more extensive food preparation such as cooking raw animal products and making chicken salad will occur in the permitted upstairs kitchen. Discussed food security and ensuring non-food staff and residents of the assisted living cannot access the cafe when it is closed. Also discussed ensuring when water is released from the dish machine or three-compartment sink that is goes down the drain versus being deflected by the grate onto the floor.
The facility has a partial CO due to items needed to be addressed on the exterior of the building-- the interior is approved by the building official.
Reviewed the following: employee health policy -- facility had copies of form 1-B that can be signed by food staff; cooling procedures -- no plans to cool; hand washing procedures / policy ; cold holding foods; rinsing produce prior to cutting or cooking; hair restraints.
Prior to opening the area to the left of the hand sink between the counter and wall needs to be caulked. Also, the area between the wall & hand sink and the area between the wall & prep sink both need to be caulked. This will be addressed in the next 4-5 days prior to the planned opening next week and a picture will be sent to the inspector.
