23: 830 Observed a couple of items in the reach-in cooler without datemarking, expiration dates or if the item was frozen and thawed it did not have information about the freeze-date. Items were hard boiled eggs (pasteurized), turkey medallions (thawed yesterday, and freeze-by and expiration date unknown), and expiration date for shredded cheese unknown.
Corrective Actions: When items are received in bulk at Lynchburg City Schools, the expiration date, or use-by date must be marked on containers. If items are frozen the expiration dates and freeze-by dates must also be marked on the containers. Ready-to-eat food items must be marked and used within 7 days of opening. Freezing stops time but you must have information and controls in place to track that time due to things like Listeria which can grow at refrigeration temperatures. All items were marked with the preparation date and thaw dates.
