Observations & Corrective Actions
22: 0820 (A2) The facility had several food items out of temperature that were improperly holding. The shredded chicken, refry beans, and salsa were all held at 43-46°F in the wealk-in cooler. The walk-in cooler itself was holding at 41-44 degrees depending on the area.
Corrective Actions: In order to maintain proper food saafety for all food items maintained in the facility it is recommended to lower the temperature of the walk-in cooler to ~38 degrees in the warmest section. Decreasing the temperautre in the ambient air will allow food items stored in containers to meet the threshold of 41°F or lower during storage. Managers on site will discard the food items in question and will also alter thier cooling processes as recommended.
Additional Comments
Progress was made on improving thier safe storage pactices in the walk-in cooler. Shelving and separation were changed to maintain proper intergrity of raw vs ready to eat.
Some tile work was in the process of being repaired.
Proper glove usage and no bare hand contact was stressed/reeducated with employees according to the manager.
Cold holding and improved cooling procedures will need to be worked on as discussed,
Overall improvement was made.
