Site visit to complete plan review application approval and review operational plans for permit application. Plan review approved. Permit approval is pending the following:
Satisfactory preopening inspection;
Satisfactory compliance with City of Lynchburg Wastewater via approval of grease trap interceptor (interior located at 3 compartment sink;
Certificate of Occupancy issuance & verification;
Confirmed # of seats;
Confirm backflow prevention @ the mop sink (quick disconnect for hose); no direct waste water connection @ ice machine; separate water line for pre-mix chemical stations; and airgap (minimum 2x the diameter of the pipe) @ 3 compartment sink.

Recommend the following:
Cooling logs and written policy for cooling procedures to enhance food safety management;
Freezing precooked food to reduce foodwaste and/or preparation needs;
Add an additional freezer for cold storage;
Utilize ice baths as a cooling method; &
Switching the locations for the smoothie prep./freezer and salad prep. stations.
