Facility has changed to using liquid pasteurized eggs at the omelet station. The cold well is being turned on a little earlier prior to use.
Addressing the mildew / mold-like growth in the dish machine on the wall, in the caulking, and on the sprayer is being worked on and should be fully addressed in the next ten (10) days. Part of the wall, the sprayer, and the caulking might need to be replaced to fully address this.
