23: 840 Observed two containers (one opened and the other one unopened) of chicken salad with a used by date of Dec. 14, 2023. Observed a metal container of cooked pinto beans with a date of 12-7-2023 in the 2-door fridge.
Corrective Actions: Person in charge voluntarily discarded the two containers of chicken salad and the pan of pinto beans. Deli salads that are prepared and packaged by a food processing plant and inspected by a regulatory authority should be discarded by the date labelled on the packaging. Other food products not listed on the exemption of the seven day rule according to regulation 12VAC5-421-830 need to be discarded after seven days (preparation date counting as day 1).

Additional Comments

Discussed cleaning the plastic pipe in the top portion of the ice machine.
