Have clean-up kit readily available in addition to written vomit and diarrheal clean-up procedure. Seal wood stand where ice machine is located; no raw wood. Ensure all working containers containing unrecognizable food items are labeled. In preparation area; have ceiling tile to cover exposed insulation and wiring to prevent contamination of food items.
