Observations & Corrective Actions
10: 3045 No handwash signs reminding employees to wash hands before returning to work at new hand sinks - 3-comp sink line, thawing room, new storage room. One also needed at front hand sink. Corrective Actions: Before opening Monday, have handwash signage at all hand sinks.
39: 640 New hand sinks, new chicken batter station present potential food contamination issues as there is no side shielding on hand sinks. Corrective Actions: Need splash guard to left of hand sink near new breading station, on left side of new hand sink on 3-compt sink line (prep sink to be installed), on both sides of storage room hand sink - soup on one side, dry storage on other. Have installed prior to opening Monday.
Additional Comments
"Pre-opening" for remodel combined with routine inspection. Entry door from hall, threshold still needs to be done. Will close hole at bottom. Even though this is not an exterior door, would recommend this door be sealed well to prevnt pest entry. See pre-opening checklist.
