The cooler equipment was defrosted and cleaned to help maintain cold holding temperatures until full repair can be made. Ice bins were placed under the prep cooler to assist in keeping food items at 41°F or below.
These temporary repairs are allowed until parts, that are on back order, are in and cooler equipment is repaired.
The dish machine is still not functioning properly and will need to be repaired. Manager says they checked the machine and noted that the thermostat or heating element may need to be replaced. Parts are on order.
Manager will email or call me to return when parts have been installed to check on repairs.
