Left vomiting and diarrhea incident clean up procedures -- please have kit or supplies on site to address any incident.

Hot water was found to be 122°F at the hand sink.

I visited this location for a pre-opening inspection today. This is a location at a concession stand at Liberty's basketball arena stadium & will only be used during some men's home games (so used less than twenty times or so throughout the basketball season in the fall/winter). A food permit was issued today (10/21). The menu is : fountain & bottles beverages, chicken sandwiches, chicken nuggets, chicken wraps, and packaged chips. All food will be prepared and packaged at the store and arrive in cooler with cold packs or in a hot box. Food arrive in coolers or hot boxes about every 1-2 hours or as needed. Food temperatures will be checked when items leave the Timberlake Rd brick & mortar store. There is no dishware or utensils outside of ice scoops and ice bins. The owners have written permission to use the three-compartment sink and dishwashing area at the arena as needed.


Verbally discussed: employee food handler health policy, hand washing policy / procedures, food handlers needing hair restraints, storage of ice scoop, using time as a public health control requires markings AND a written plan (already submitted); having and using metal stem probe thermometers for food as well as having accurate thermometers in all cold and hot holding units.
