22: 0820 (A2) Observed pizza sauce in 3 door cooler cold holding at 47F. This sauce was made this morning and is still in the cooling stage.
Corrective Actions: Move the sauce to another cold holding unit that can maintain 41F or below. (Immediate Correction Needed - PIC moved the sauce to another cooler.)
47: 1570 The 3 door cooler is still cold holding above 41F. The internal temperature on the left side of the cooler is 48F and on the right side is 46F.
Corrective Actions: Repair, replace, or repurpose this unit. If the unit cannot cold hold time/temperature control for safety foods at 41F or below, then it cannot be used for cold holding. (30 Days to Correct- Do not use for cold holding until an inspection reveals it is working properly.)
If the kitchen 3 door cooler is repaired, replace, or repurposed before the follow-up date, you can call for an inspection to use the unit.
