This was conducted as a follow-up inspection. The following was noted:
-according to the Person in Charge (PIC), employees are now routinely monitoring cold holding temperatures of Time/temperature Control for Safety (TCS) Foods during cold holding, using a food temperature thermometer
-the PIC has purchased a food temperature measuring device (thermometer) for monitoring food temperatures
-the back area reach-in cooler has been repaired and is now maintaining TCS foods at or below 41°F; maintenance has been scheduled to repair the cookline prep cooler to restore a state of condition that allows for proper operation (proper cold holding of TCS foods at or below 41°F) and, according to the PIC, is awaiting a part significant to its proper functioning; the PIC has agreed to place TCS foods held at the cookline prep cooler on ice/in ice-water baths and monitor cold holding temperatures to ensure they are maintained at or below 41°F; use of the unit may resume when TCS foods can maintain temperatures at or below 41°F AT ALL TIMES; FAILURE TO MAINTAIN COMPLIANCE WITH COLD HOLDING REGULATIONS WILL RESULT IN CIVIL PENALTY
