Observations & Corrective Actions

1: Pic does not know proper cold holding temperature or how to set up 3 comp sink to wash rinse and sanitize. Employee drinks are stored throughout kitchen.

2: No employee health policy posted. Pic was not able to provide reportable symptoms or diagnoses. Will email operator employee health fact sheet and advise posting it.

6: Asked employee, who had one hand gloved and other hand ungloved, to remove uncovered drink from food prep table with food present. Employee picked it up with gloved hand, turned away from prep table, took a drink, then discarded with their non-gloved hand. Employee then obtained a new glove and gloved their previously ungloved hand and picked up a burger bun to begin food prep. Asked employee to discard bun, remove gloves and wash hands. Did not observe any employees wash hands other than when I asked them to.

20: All tcs foods in ric near grill temping 48 F or higher. Ambient temp of ric reading 51 on multiple readings 30 min apart. Cos by pic relocating some foods to ric in back and putting ice on others.

26: Gallon can of paint primer sitting on shelf above alide door ric. Additionally, bottles of Drain-O, bucket of tile mortar, tube of caulk, and bottle of super glue were all found in kitchen area. Advised pic to relocate all chemical substances unrelated to food prep to back storage area.

26: Unlabled spray bottle with green liquid sitting next to clean serving trays. Cos by having pic label.

34: No thermometer in glass door ric near grill.

36: Knats around bread storage area.

37: Employee drinks stored throughout kitchen and on top shelf of ric near grill above food intended for customers.

37: Mesh bag of whole onions sitting on floor next to shelf in room behind kitchen.

41: Ice cream scoop stored in room temp water in pan near ice cream cooler.

41: Ice scoop in front ice machine stored on side in ice rather than handle up.

45: Shelving and sliding door ric cooler handle are very dirty.
