CA: I instructed person in charge on proper date marking. Temperature controlled items that are ready to eat that are opened or cooked to a ready to eat state the previous day must be date labeled. The person in charge showed me the date labeling stickers they used and we discussed the process of labeling items properly. I will also email a date marking fact sheet to the person in charge. The items that were not marked had been cooked the previous day, the person in charge labeled them with the correct stickers
