19: Hot dogs and burgers out on buffet line not within proper hot holding temp range. Pic stated they were out for at least 30 mins. See food temps. Had pic reheat foods in oven. Discussed using a time policy on these foods. Advised op that i am available to assist in creating a policy.
20: Ice cream mix in top part of ice cream machine holding well not within proper cold holding temp range on both wells. Pic embargoed remaining ice cream, will have a tech come to service machine. Op will not use machine until its been serviced and reading 41 and below.
This is a repeat violation, a warning letter will be requested.

Discussed implementing a Food Safety Plan in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to asist with developing the FSP.
Discussed proper hand washing, ware washing, food source, food storage, holding and cook temps, cooling when applicable, employee hygiene, employee health, demonstration of knowledge, and storage and use of of toxic items.
