20: Cooked chicken in prep cooler at 56°F, cooked beef in prep cooler at 54°F, mozzarella cheese in prep cooler at 56°F. Prep cooler at 54°F.TCS foods were placed in there 2 hrs. ago. Cooler is not operating properly and can not be used for Temperature controlled foods. Corrective action - Person In Charge moved tcs foods from prep cooler to Reach in freezer for rapid cooling. Cooler needs to be serviced. 10 day notice issued to repair cooler.
