20: Precooked chicken wings preportioned in prep cooler. 2 prepprtioned chicken wings were above 41°F, the other 4 were below 41°F. Unsure when they were prepped / preportioned. Emabrgoed. Cream cheese mix sitting out at room temperature unsure when it was opened or put out. This inspection occured after shift change. Embargoed food. A warning letter will be requested due to this priority item violations not being noted two inspection reports in a row.
20: Pizzas being made and stored on racks near prep cooler until they are baked for preorder. Pic stated pizzas were gong to be left out 1 to 1 1/2 hours until they were baked and picked up by customer. Discussed they needed to start using a tphc policy on pizzas ot keep them at 41°F until they are baked.

Discussed implementing a Food Safety Plan (FEP) in order to obtain active managerial control over repeated priority item violations.
